How to braise turkey drumsticks

Braising a turkey drumstick is an alternative method of cooking to traditional roasting. The technique of braising can be used for other poultry or meat, following the same method. The idea of braising involves cooking the turkey drumstick with extra liquid in a covered pan.

Ingredients

  • 2 turkey drumsticks
  • 5 garlic cloves, chopped
  • 50g of ginger, chopped
  • 30g of five-spice powder
  • 2 tbsp of oil
  • 50g of honey
  • 50g of soy sauce
  • 500ml of chicken stock
  • 500ml of red wine

Method

Marinade the turkey leg in the five-spice, ginger and garlic for 3-12 hours then preheat the oven to 180°c

Heat the oil in a pan over a high heat, brown the drumsticks all over and place in an oven-proof dish

Add all the marinade ingredients plus the honey, soy sauce, chicken stock and red wine. Cover with foil and place in the oven

Cook for 2 hours, removing the foil half way through cooking. The meat should fall away from the bone when cooked

Uses

Have a practice at this technique using William Drabble's slow cooked turkey leg, pancetta, wild mushrooms and baby vegetables. Lisa Allen adds apple juice to her turkey drumsticks for a fresh, sweet flavour.
