How to make a tikka marinade

Vineet Bhatia shows how to make a simple chicken Tikka marinade. This recipe has two stages of marinating the chicken, to help develop flavour. Finely slicing the chicken breast ensures that the marinade permeates all the way through the meat.

Ingredients

  • 2 tbsp of lemon juice
  • 1 tbsp of ginger paste
  • 1 tbsp of garlic paste
  • 1 pinch of salt
  • 1 tsp red chilli powder
  • 1/2 tsp red chilli paste
  • 100g of natural yoghurt
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 20ml of vegetable oil

Slice the chicken into thin slices

Mix together the first marinade ingredients and coat the chicken well. Leave to marinate for 20 minutes

Mix the second marinade ingredients together and coast the chicken. Leave to marinate in the fridge for 6 hours

Serving suggestions

The chicken would traditionally be cooked in a clay tandoor oven but at home you could grill, oven bake or even barbecue the chicken and serve with fluffy basmati rice. Serving chicken tikka in a wrap is a great way to enjoy this dish for a casual dinner.

Of course, chicken is not the only ingredient that benefits from a tikka marinade. Paneer tikka makes a great alternative to meat, or apply your marinating skills to a firm fish like monkfish for a memorable dish.
