How to prepare butternut squash

Butternut squash is a delicious winter vegetable available in season from September to December. It is quite tough to cut, so work carefully when using a sharp knife. Butternut squash can be used in a range of sweet and savoury dishes form Dominic chapman's butternut squash soup to Robert Thompson's bavarois of butternut squash with qunice sorbet and poached blackberries.
