How to roast asparagus

8 December 2014

Roasting asparagus is a great cooking method for adding extra flavour to a simple side dish, perfect for serving straight from the oven. You should always roast asparagus in a hot oven, and make sure that you don’t overcrowd the roasting dish as this will cause some of the roasted asparagus to steam and cook unevenly.

Variations

Nathan Outlaw parboils the asparagus before roasting for 1 minute, refreshing in ice water before roasting to help retain the colour.
