How to make vegetable stock

Ingredients

Oils & Vinegars

  • 1 tbsp of olive oil

Dairy

  • 2 tbsp of butter, (omit if making a vegan stock)

Fruit & Vegetables

  • 1 onion, finely sliced
  • 1 leek, white part only, finely sliced
  • 1 celery stick, finely sliced
  • 200g of button mushrooms, finely sliced
  • 1 carrot, finely sliced
  • 1 bulb of garlic, halved horizontally

Beverages

  • 150ml of white wine, (optional)

Spices & Dried Herbs

  • 2 bay leaves, fresh or dried

Salad & Fresh Herbs

  • 4 sprigs of thyme

Store Cupboard

  • 1/2 tsp black peppercorns, lightly crushed
