Oils & Vinegars
1 tbsp of olive oil
Dairy
2 tbsp of butter, (omit if making a vegan stock)
Fruit & Vegetables
1 onion, finely sliced
1 leek, white part only, finely sliced
1 celery stick, finely sliced
200g of button mushrooms, finely sliced
1 carrot, finely sliced
1 bulb of garlic, halved horizontally
Beverages
150ml of white wine, (optional)
Spices & Dried Herbs
2 bay leaves, fresh or dried
Salad & Fresh Herbs
4 sprigs of thyme
Store Cupboard
1/2 tsp black peppercorns, lightly crushed
