Ingredients

  • 400g of rump steak, preferably Maremmana beef

  • 25g of sugar
  • 2 tbsp of soy sauce
  • 1 tbsp of toasted sesame seeds, toasted
  • 50g of sesame seeds
  • 200g of 00 flour
  • 1 egg yolk
  • 1 pinch of salt
  • 1 egg white, for glazing
  • 3 egg yolks
  • 4g of salt

Oils & Vinegars

  • 50g of white wine vinegar
  • 50ml of rapeseed oil
  • 1 tbsp of oil, plus extra for greasing
  • vegetable oil, for frying
  • 200ml of olive oil

Salad & Fresh Herbs

  • 10g of fresh ginger, finely chopped
  • 1 tbsp of chopped chives
  • dandelion leaves
  • shiso cress leaves

Fruit & Vegetables

  • 2 garlic cloves, finely chopped
  • 200g of raspberries
  • baby carrots, tops only
