Lamb with sweetbread and ricotta croquettes

Ingredients

Fresh Meat

  • 1 lamb rack
  • 1kg lamb bones, chopped
  • 1kg chicken wings, chopped
  • 200g of lamb sweetbreads

Dairy

  • 50ml of clarified butter
  • 1 knob of butter
  • 1 egg, beaten

Fruit & Vegetables

  • 1 garlic clove
  • 1 onion, peeled and chopped
  • 1 carrot, trimmed and chopped
  • 1 stick of celery, trimmed and chopped
  • 300g of Jerusalem artichoke, peeled
  • 1 shallot, peeled and diced
  • baby spinach

Store Cupboard

  • 1 sprig of rosemary
  • 1l vegetable stock
  • salt
  • 1 sprig of rosemary, leaves finely chopped
  • plain flour
  • 100g of Panko breadcrumbs (1)

Oils & Vinegars

  • oil
  • 25ml of white wine vinegar
  • vegetable oil, for deep-frying

Cheese

  • 100g of ricotta
