A pescatarian diet is that which includes fish and seafood but no meat. It can be a useful stepping stone into vegetarianism and, providing the fish is sustainably sourced, is a lifestyle which brings with it many nutritional and environmental benefits. This collection of fish recipes contains some excellent inspiration for those on a pescatarian diet, from quicky and easy seafood suppers to impressive dinner party dishes.

For an easy baked fish recipe try Grazia Soncini's Flounder with potatoes, tomatoes and olives; with the fish sitting on a bed of vegetables as it bakes in the oven, it's a superb one-pot dinner. Daniele Usai's striking prawn starter recipe with coconut, passion fruit and fragrant coriander is deceptively simple to prepare, or encourage your guests to get hands on with their food and try the Cerea Brothers' Steamed langoustine recipe, served with citronette and mayonnaise.

Alongside delicious seafood pasta recipes, such as Cristina Bowerman's Cuttlefish spaghetti, there are also some slightly more unusual pescatarian dishes. Salvatore Elefante's easy octopus recipe with potatoes and green beans is a great introduction to preparing an ingredient some might find slightly daunting, while similarly Grazia Soncini's simple Roasted eel recipe would be a good place to start for the uninitiated.
