As the second-biggest island in the Mediterranean, it’s no wonder Sardinia has a vibrant and unique food scene that’s unlike the Italian mainland. With so many international influences over the years (the island was conquered by many different civilisations due to its strategic location), it has elements of Spanish and Arabian culture intertwined with its more modern Italian culture.

This collection of Sardinian recipes is the perfect introduction to the flavours of this very special island. There’s nothing more Sardinian than a plate of Pane frattau, which makes the most of the famous Sardinian bread pane carasau. Sardinia isn’t so un-Italian that it doesn’t have any pasta, and the local take on gnocchi called Malloreddus, along with Culurgiones, stuffed with potato, cheese and mint, make for prime comfort food. After something sweet? Try Seadas – deep-fried parcels of orange zest and sweet cheese drizzled with honey – or Pardulas, an Easter treat flavoured with saffron.
