There is a wide variety of avocado available in the UK. The most common type is Hass avocado found in the UK from September and throughout the winter. Avocado have a lovely creamy and nutty flavour perfect for both sweet and savoury recipes. Have a go at de-stoning an avocado and using in Andy Waters'crab salad with avocado cream or Marcello Tully's avocado, lime and chocolate parfait. When buying avocado, never keep them in the fridge as they don't ripen properly and the flesh may discolour.
